Tomato pie
Ingredients:
1 pie crust
6-8 tomatoes
3 tablespoons (45 ml) Dijon mustard
5 tablespoons (75 ml) Grated parmesan
3 slices Swiss cheese
Fresh basil or dry
Salt and pepper
Preparation:
Press the tomatoes to remove
the juice and seeds.
Let it drain on towel.
Dice tomatoes in big pieces and reserve.
Brush the crust with Dijon mustard; add half of tomatoes in crust.
Salt and pepper, and sprinkles parmesan and basil.
Add the rest of the tomatoes.
End with Swiss cheese cut in pieces.
Bake in oven (lower shelf) at 375°F (190°C) until for
30-40 minutes.
