Italian Bruschetta
Ingredients:
1.5 lbs (0.7 kg) Seeded and
ripe tomatoes, juice removed and diced
2 tablespoons (30 ml) chopped onions
2 large garlic gloves finely chopped
1/4 cup (50 g) fresh basilica finely chopped
2 teaspoons (10 ml) red wine vinegar
2 tablespoons (30 ml) olive oil (extra virgin)
Salt and pepper
Crusted bread
Italian dressing
Mozzarella
cheese shredded
Olives and sliced mushrooms (optional)
Preparation:
Mix all ingredients except:
bread, vinegar, cheese, olives and mushrooms.
Leave at room temperature for 1 hour.
Slice bread.
Dab the bread on both side with the Italian dressing.
Add olives and mushrooms (if desired) and to it with mozzarella
(shredded)
Bake in oven until golden brown
* Serve each slice with the tomato mixture.
