Strawberries and
white chocolate pie
Ingredients:
1 1/3 cups (325 ml) crumbled
chocolate cookies
1/3 cup (75 ml) melted butter
1 cup (250 ml) milk
1 egg
1/4 cup (50 ml) granulated sugar
2 tablespoons (30 ml) corn starch
3 tablespoons (45 ml) orange juice
5 squared white chocolate of 30g (1 oz) each
8 oz (250g) cream cheese, in cubes
1 teaspoon (5 ml) orange rind
3/4 cup (175 ml) fresh chopped strawberries or frozen, (drain
if frozen)
Preparation:
Oil a plastic sheet (Saran
Wrap) or use a spring pan (bottom is removable).
In a small pan, beat together milk, egg and sugar.
In a small bowl, mix the corn starch with orange juice than add
it to the milk mixture.
Warm it up on medium heat stirring it until smooth.
Pour in a mixing bowl and add cream cheese and beat it until
smooth texture.
Then add orange rinds and strawberries and pour into the crust.
Put in the freezer for 1/2 hour or until the decoration is hard.
Remove from mold before serving and leave it at room temperature
for 20 minutes.
Decorate with fresh strawberries.
For an elegant touch, melt another white chocolate square and
dip the bottom of the strawberries in it.
Refrigerate it to get hard before putting on the pie.
